Rich, buttery, and among the most antioxidant-dense tree nuts. Pecans are also one of the lower-carbohydrate options, which has earned them a following well beyond the pie crowd!

They're delicate, which makes them harder to roast well. Pecans have a high oil content and a soft structure, so the window between perfectly toasted and scorched is narrow! Small batches and close attention are the only way to do it right, which suits how we work anyway.
